Who says you can’t enjoy Ice Cream in winter? Enjoy this Manuka Ice Cream that’s good for you!
Exclusive to New Zealand, Manuka honey has a very distinctive and subtle taste that makes it feel and taste different from other types of honey. It looks different, with a texture that’s unique to itself. But, more than its looks, Manuka honey is considered the healthiest kind of honey, with higher antibacterial properties compared to other types of honey.
Ingredients that you’ll need:
- 2 cans of Thai coconut milk, preferably full fat
- Around 1/4 of a cup of Kore New Zealand MGO 83+ Manuka honey with 2 tablespoons more set aside
- 2 tablespoons of bee pollen
- Half a teaspoon of Xanthan gum or a tablespoon of arrowroot powder
- Just a pinch of sea salt
How to Prepare
Step 1: Blend together the Manuka honey, bee pollen, arrowroot powder or Xanthan gum, coconut milk, and vanilla until the texture becomes smooth. Leave the mixture inside the refrigerator at least overnight. You can also leave it inside the refrigerator for a few days for better effect.
Step 2: Process the mixture inside an ice cream machine as instructed by the manufacturer of the machine.
Step 3: Once done, get a third of the ice cream and place it inside a chilled container. Spread it evenly and drizzle some Manuka honey on top. If you have bee pollen left, sprinkle it over as well as the rest of the ingredients.
Step 4: Put the ice cream back inside the freezer overnight.
Step 5: Before serving, let it sit at room temperature for up to 15 minutes first.
Step 6: Enjoy!
