Ingredients

Servings: makes 6 sliders

・3 chicken thighs
・½ tsp garlic powder
・½ tsp cayenne pepper
・½ tsp smoked paprika
・½ lemon juice
・Salt, to taste
・¼ cup flour
・¼ cup cornstarch
・Oil for frying
・Sriracha mayo
・Salad of choice (lettuce, arugula, or coleslaw work great)

・Slider buns
・Butter, for toasting buns

Instructions:

  1. Prepare the Chicken:
    • In a bowl, combine the garlic powder, cayenne pepper, smoked paprika, lemon juice, and salt.
    • Season the chicken thighs evenly with the spice mixture, ensuring they are fully coated.
    • In a separate bowl, mix together the flour and cornstarch. Dredge the seasoned chicken thighs in this mixture, making sure they are well coated.
  2. Fry the Chicken:
    • Heat oil in a deep pan or fryer to 375°F (190°C).
    • Once the oil is hot, carefully place the chicken thighs in the oil.
    • Fry for 5-8 minutes, until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (74°C).
    • Remove the chicken from the oil and let it drain on a paper towel-lined plate.
  3. Butter and Toast the Slider Buns:
    • Spread a thin layer of butter on the cut sides of the slider buns.
    • In a hot skillet or on a griddle, toast the buns, cut side down, until they are golden brown and slightly crispy.
  4. Assemble the Sliders:
    • Spread a generous layer of sriracha mayo on the bottom half of each toasted bun.
    • Add a handful of your chosen salad on top of the mayo.
    • Place a fried chicken thigh on top of the salad.
    • Drizzle a bit of hot honey over the chicken for a sweet and spicy kick.
    • Top with the other half of the bun.
  5. Serve:
    • Serve the sliders immediately while the chicken is still hot and crispy. Enjoy these spicy, sweet, and savory bites!
