Preparation Steps

Step 1: Wash the courgette, carrots, spring onion, and red pepper. Slice all but the spring onion into thin strips. Chop the spring onion into smaller pieces. 

Step 2: Combine all of the vegetables except for the edamame beans in a large mixing bowl. You can use your hands if you like. Just make sure that they’re clean!

Step 3: Chop the tofu into small blocks of squares and then add it to the vegetable mixture, followed by the edamame beans. 

Step 4: Whisk the Manuka Honey and Peanut Sauce ingredients in the blender and pour them over the vegetable mix.
